Ingredients

Batter:

125 g butter
1.5 tsp ground cardamom seeds
2 dl flour
1.5 dl sugar
A pinch of salt
3 small eggs

Topping:

50 g butter
2 tbsp sugar
4 tsp cinnamon
2 tsp vanilla sugar

Garnish:

Pearl sugar

Step-by-step

Step 1

Before heading outdoors, prepare by mixing the dry ingredients for the batter and the topping in two separate bowls.
For the topping: Mix all the ingredients except the butter in a bowl.
For the batter: Mix cardamom, flour, sugar, and salt in a bowl.

Step 2

Start the inner ring of the gas burner on the lowest heat. Melt the butter for the topping in the pan. Stir the melted butter into the bowl with sugar, vanilla sugar, and cinnamon. Set aside. In the same pan, melt the butter for the batter. Remove the pan from the heat and mix in the dry ingredients for the batter. Stir in the eggs and blend without whisking.

Step 3

Drizzle the topping over the batter and sprinkle with pearl sugar.

Step 4

Place the pan back on low heat and cover with a lid or plate (be careful as the plate will get very hot). Let the cake cook for about 15-20 minutes. Halfway through, lift the lid and run a knife through the topping’s pattern so that any uncooked batter seeps down to the bottom. Turn off the heat and let the cake bake for about 5 minutes on residual heat. The cake is ready when the edges and bottom are set but the top is still gooey.
