Stuffed bell peppers and courgette in smoker

The recipe yields the best results when cooking with the Muurikka Electric Smoking Oven PRO.

• 2 peppers
• 1 courgette
• 150 g bacon
• 3 spring onions with tops
• 300 g chanterelles or other mushrooms
• 100 g soft cheese
• sprinkle with grated mozzarella
• black pepper
• salt

Cut the bacon, the onions and the mushrooms into small pieces. First brown the bacon in a pan. Remove the bacon and fry the pieces of onion and mushroom in the bacon fat. Mix the bacon and the soft cheese with the pieces of onion and mushroom. Add salt and pepper. Heat up to melt the processed cheese and form a smooth paste.
Split the courgette and scoop out the pulp. Cut off the tops of the bell peppers and remove the seeds. Stuff the peppers and the zucchini halves with the paste. Sprinkle the courgettes with grated mozzarella and cover the bell peppers with their tops. Smoke at level 3 (approx. 200 °C) for 30 minutes.
