Smoked half grain-fed chicken with a lemon thyme and sage seasoning à la Henri Alén

The recipe yields the best results when cooking with the Muurikka Electric Smoking Oven PRO.

  • 1 whole grain-fed chicken
  • 1 lemon
  • 4 sprigs of thyme or lemon thyme
  • 8 sprigs of sage
  • crushed black pepper
  • 1 tsp smoked paprika
  • 2 onions
  • 2 carrots
  • 4 whole cloves of garlic
  • salt
  • a little olive oil

Cut the chicken lengthwise in half with a sturdy pair of scissors. Wash the lemon. Grate the peel and squeeze the juice into a bowl. Chop and add the herbs, crushed black pepper and smoked paprika into the bowl. Add a little olive oil to the marinade. Leave the chicken halves in the marinade for at least two hours. Peel and cut up the carrots and the onions.

Peel and cut the cloves of garlic in half.

Fold a bed of foil for the chicken halves on the smoking rack. Make a bed of vegetables and place the chicken halves on them. Start smoking at level 3. Smoke for 20 minutes until smoke begins to properly form. Then drop the power to level 2 and smoke the chicken halves for about 90 minutes. Finally, season with salt.
