Lightly smoked bratwurst with sweet peppers and potato salad seasoned with whole-grain mustard à la Henri Alén

The recipe yields the best results when cooking with the Muurikka Electric Smoking Oven PRO.

  • 400 g bratwurst sausage
  • 4 sweet peppers
  • 1 onion
  • 2 cloves of garlic
  • 2 sprigs of thyme
  • a little olive oil
  • salt and pepper

Additionally: Muurikka grill/smoking basket

Cut the sweet peppers into large chunks, peel and cut the onion. Peel the garlic cloves and slice in half. Put the ingredients in a bowl and add a little olive oil, salt and pepper. Also add the sprigs of thyme. Mix the ingredients together and put them in the smoking basket. Start smoking at level 3. Place a handful of smoking chips on the tray and start smoking. When smoke begins to properly form, drop the temperature to level 1 and smoke for another 30 minutes. Put the bratwursts in the smoking basket and smoke for another 20 minutes, or until the bratwursts are hot.

Serve immediately with potato salad seasoned with whole-grain mustard.


Potato salad seasoned with whole-grain mustard

  • 1 kg boiled summer potatoes
  • 1 red onion
  • 2 tsp capers
  • 1 outdoor cucumber
  • 2 tbsp chopped chives
  • 2 tsp whole-grain mustard
  • 0.5 dl red wine vinegar
  • 2 tsp sugar
  • about 1 dl olive oil
  • salt and black pepper

Peel and chop the red onion. Put it in a bowl with the red wine vinegar, sugar and olive oil. Mix well. Peel and dice the cucumber. Cut up the potatoes and chop the capers. Carefully mix the ingredients together and season with salt, if necessary. Mix once more before serving and sprinkle with chopped chives.
